Chicken & Yellow Rice
Since I share my recipes on stories a lot, y’all have been asking to see specific details on the blog, so here we go! I’m sharing one of my favorite protein packed, low-calorie meals that seriously anyone can cook, it’s so easy!!



What you’ll need:
- 1 large chicken breast
- 10 oz yellow rice
- 1 chicken bouillon cube
- Large Pot
- Measuring Cup
How to Cook:
- Start off by rinsing your chicken breast and removing, then fill your large pot with water and bring to a boil. Once boiling, add chicken bouillon cube and chicken and add a timer for 20min.
- Cut chicken breast in half, make sure it is fully cooked and set to the side to rest while preparing rice.
- Remove 3 1/3 cups of water into measuring cup out of your large pot, and pour out the rest of the water. Pour measured amount back into large pot and bring to a boil again. Once boiling add rice, cover with lid and place heat on low. Cook for 20 min while fluffing with a fork occasionally.
- While rice is cooking, shred chicken into small pieces.
- After rice is cooked, add shredded chicken into rice mixture and stir until chicken is back up to desired heat, usually takes 2-4 min.
- Remove from pot and eat!
Portions:
This recipe gives myself and Nathan a full bowl of food, and I take 1/4 of the meal and place in a container for lunch the next day. Nathan eats at least half, and once dividing out leftovers, I eat about 1/4 of the meal. Total calories for this recipe is 1,500. After dividing portions, the calorie per my serving is 500 calories, which is amazing for rice and chicken! Its super yummy and a staple for a quick meal in our house!
